Red Wagon Bakery In Canaan Hoping To Launch In The New Year

Before cutting into your Thanksgiving turkey later this week, we have a feel-good story to help get you in the holiday spirit. In the small town of Canaan, a GoFundMe page has been created to bring the Red Wagon Bakery to life.


The dream of Nellie Smith, who is trying to turn her lifelong love of baking into a business. Now, she has taken the next step and signed a Purchase and Sales agreement to acquire a property that would become Red Wagon. The business she is planning to take over is a restaurant called “Dishin It Out” at 1194 US 4 in Canaan. The current owner is planning to retire and Ms. Smith would not take over officially until the end of December.

In the meantime, Nellie has to move her family to the area in early January. If all goes well with the acquisition, a soft opening would occur hopefully in March with a grand opening in the spring. Ms. Smith would close the existing business for a short time to make a few modifications and changes to prepare for an exciting launch in the new year.

The bakery itself would seat 24 and have a country/rustic atmosphere with a little vintage flair. Menu items are expected to include cookies, muffins, scones, cakes, pies, quiches, and sweetbreads with everything made in-house. Additionally, there would be espresso and coffee along with a small breakfast/lunch menu.

Starting a business has costs and Nellie would appreciate your help. She has set up a GoFundMe page for anyone that would like to contribute.
