They are going into the space where Dixie Blues went out of business so many months ago at 345 Amherst Street, Unit 1. A sign is up and work appears to be happening inside.
It is our understanding that they will be the sister dining establishment of Bistro 781 in Waltham, MA. From the similarity on the name, NH Reviews has a high level of confidence on this one.
With that in mind and thinking that the menus would be alike, they could take some of their current items to the new place. Options include salads/bowls, appetizers, entrees, burgers, and vegan foods.
If the hours of operation match with Bistro 781, Bistro 603 will be open Monday to Wednesday with dinner from 5:00 pm to 10:00 pm. Thursday has breakfast/lunch from 11:00 am to 2:30 pm and dinner from 3:00 pm to 11:00 pm. Friday offers breakfast/lunch from 11:00 am to 2:30 pm, dinner 3:00 pm to 11:00 pm, and late-night menu 11:00 pm to 12:30 am. Saturday includes brunch 9:00 am to 2:30 pm, dinner 2:30 pm to 11:00 pm with late-night menu 11:00 pm to 12:30 am. Sunday has brunch 9:00 am to 2:30 pm and dinner from 2:30 pm to 10:00 pm.
