Tucker's attempting to conquer breakfast market

You may not be familiar with the name Tucker's but that may change in the near future. This husband and wife team, Hale and Erica Cole Tucker, first became established in the restaurant world when they opened the successful Maddie's in Salem several years. After selling that restaurant they started with a new concept, Tucker's, and picked their first location in Hooksett a few years back. Then, about a year ago they opened the second Tucker's in New London and most recently in our own backyard, the South End of Concord at the former location of the Cornerview.

Each Tucker's has the same basic decor. The walls are lime green with white trim giving them a happy and upbeat look. With the newest Concord location, you can't help but be impressed with what was created and we think most of their customers are going to feel the same. They added larger windows a fresh coat of paint and replaced the carpeting with hardwood floor. A cute coffee bar was also added in the front so you can grab a cup of Joe while you wait.

The menu has standard breakfast fair along with some specialties focusing on fresh wholesome ingredients. You will find pancakes, waffles, Benedict's, omelettes, breakfast sandwiches, skillets and scramblers. For those of you that are looking for something more healthy, yogurt parfaits and fruit smoothies are also available.

On this visit we decided to try the Polish Skillet and substituted bacon for the kielbasa.

This had scrambled eggs, cheddar cheese, sautéed spinach and onions served over house potatoes and topped with hollandaise. The flavor was very good and while the bacon probably added more salt than we needed we enjoyed this dish.

The staff was friendly throughout and our waitress, Rachel, was wonderful.

The owners seem to have found a winning formula. Taking over existing restaurants and giving them a well needed boost with good food and making a brand for themselves. Of course they can't do it all themselves and finding someone to run them is important to their success. For example, our waitress told us that the Concord location is being run by a young couple from Vermont who will manage the day to day operations. She also indicated that they are hoping to continue to expand so don't be surprised if you see a Tucker's open near you.
